Baking line for baguette

This is an excellent example of a complete baking system for an Italian bread producer. It consists of a tray-carrier proofer and a mesh-belt tunnel oven united with each other by the system of conveyors, equipped with infeed/outfeed units, cutting machine and needle-type depanner, and managed by a highly technological software. As a special feature, replacement of the trays in the circuit (for instance, changing the type of trays) is performed automatically. In one tower the trays are collected in the trolley to be taken out, while in the second tower other trays are picked up to be placed into the circuit.
