A solution for proofing dough on trays, boards, pans, etc. Trays are loaded from 2 lateral brackets one step at a time until the tower is filled, the trays are then shifted by the tower top to the tower bottom. This type of proofer is developed with series of independent towers and can not be positioned over the oven, but allows to occupy less width to the ground and be developed in length. The infeed and outfeed are positioned at ground level.
